夸克干酪是新鲜干酪的重要品种之一，质量良好的夸克干酪风味柔和清淡，质地细腻，介于酸奶和酶凝干酪之间，口感好，通常与稀奶油混合，许多家庭都把它用于与自制的食品和菜肴中混合使用。
本实验采用了直接加入有机酸的方法来生产夸克干酪，替代了凝乳酶的使用，节省了生产成本，是一种新型的干酪制作方法。直接加入有机酸生产夸克干酪是一种适应市场需求的快捷生产方式。本实验研究了直接酸化法生产夸克干酪的工艺条件，以柠檬酸为生产新鲜酸化干酪的最佳酸化剂，根据单因素及L9(34)正交试验设计，筛选出了新鲜酸化干酪的最佳工艺参数，其最佳的工艺条件为：杀菌温度为83℃，CaCl2添加量为0.02%，凝乳温度为55℃时新鲜酸凝干酪的品质最佳。结果表明，直接酸化法生产夸克干酪的工艺所得的制品可以用于实际生产。

Abstract
The quarks cheese is one of the important fresh cheese varieties, quality good flavor soft light, quarks cheese, yogurt and between the quality of a material is exquisite taste of enzyme, between the cheese mixture with cream, many families make it with homemade food and used in mixed use dishes. This experiment was adopted to join the organic methods to direct production quarks cheese, replaced the use of enzyme curd, save the cost of production, is a new kind of cheese making method. Add cheese organic production quark is a to meet the market demand of quick production mode. The experimental research method, the direct acidification process conditions of production quarks cheese, citric acid to produce the best acidification fresh acidification cheese, according to the single factor and orthogonal test L9 (34), a new design of optimum parameters of acidification cheese, the optimum technological conditions for sterilization temperature for 83 ° c, CaCl2, additives for 0.02%, curd temperature for 55 degrees of fresh acid quality of cheese. Results show that the method of direct acidification process of production of quarks cheese products can be used in the actual production.
