年产1000吨山西老陈醋酒精发酵车间工艺设计

山西老陈醋以色、香、醇、浓、酸著称于世,本设计对年产1000吨的山西老陈醋醋厂进行设计,其中物料的液化、糖化、酒化部分采用液态发酵,醋酸发酵部分采用液态回流的方法固态发酵。本设计通过对生产各过程进行物料衡算,得到年产1000吨老陈醋的物料耗量,高粱:186123kg,淀粉酶:746kg,糖化剂:29400kg,酒母93061kg,醋酸菌种醅9303kg,以及对各过程进行热量衡算,得到生产所需蒸汽总量70518kg和冷却水耗量3956685kg,所需设备,蒸煮罐5m3*4,糖化罐6m3*4,酒精发酵罐6m3*4,醋酸发酵罐12*5m3,并进行车间的布置,完成年产1000吨山西老陈醋醋厂的工厂设计。

Process design of alcohol fermentation workshop of Shanxi old vinegar with annual output of 1000 tons
Abstract: Shanxi old vinegar is famous for its color, fragrance, alcohol, concentration and acid. This design is designed for the Shanxi old vinegar factory, which produces 1000 tons annually, in which the liquefaction, saccharification and alcoholification part of the material are fermented by liquid, and the fermentation of acetic acid is made by the liquid reflux method. Through the calculation of the production process, the material consumption of 1000 tons of old aged vinegar was obtained, and sorghum: 186123kg, amylase: 746kg, the saccharifying agent: 29400kg, the 93061kg, 9303kg of the acetic acid bacteria, and the calculation of the heat balance of the various processes, and the total amount of steam, 70518kg and the cooling water consumption of the production were obtained. 6685kg, the required equipment, the steaming tank 5m3*4, the saccharifying tank 6m3*4, the alcohol fermenting tank 6m3*4, the acetic acid fermenting tank 12*5m3, and the layout of the workshop, completed the factory design of the 1000 tons Shanxi old vinegar vinegar factory.
