中国菜名英译的原则与方法
摘  要

随着中国对外开放的扩大,中国菜名的翻译对国内的中、高档酒店和海外的中餐店变得日益重要。富含中国历史文化信息的中国菜名的翻译对传播中国文化起着促进作用,但这些菜名的翻译却缺少比较统一的规范。文章首先指出现今社会上广泛存在于餐饮行业中的翻译混乱,缺乏统一标准的现状,并分析了翻译中的一些具体问题。接下来从中国菜名出发进行分类,对中国菜名的英译作了深入的分析,然后总结了中国菜名中可能遇到的各种命名方式与名称结构,以及与之相对应的翻译方法并归类总结。最后,作者建议在实际翻译操作中应将菜名按其表述特点进行分类,然后择定合适的翻译方式,做到“分门类别,对症下药”,从而解决中国菜名翻译长期存在的混乱和不规范等问题。

Principles and Methods for the Translation of Chinese Dish Names
 
ABSTRACT

The translation of Chinese dish names is becoming increasingly important to hotels and restaurants both domestic and overseas with the expansion of China’s opening up to the outside world. The translation of Chinese dish names, which are rich in historical and cultural information, plays a particular role in promoting Chinese culture. However, the translation now in China is yet to be regularized. Thus, this paper first points out the disorderness and lack of standard criterion in the English translation of Chinese dish names in nowadays catering industry and analyzes the problems in existing Chinese-English menu translation. Then it classifies the Chinese dish names, analyzes the English translation of Chinese dish names in an intensive way, then summarizes the naming forms and name structures of Chinese dish names, sums up the translation principles and methods accordingly. Finally, the paper suggests to classify the characteristics of Chinese dish names, then chooses the suitable translation styles, to make sure to “ apply a proper remedy against the case”. Only in this way can the long existing problems of disorderliness and ineptitude of the menu translation in the catering industry be resolved.
