摘  要

本课题以芒果作为水果保鲜试验的试样,以PE、70%LLDPE30%LDPE、PVDC保鲜膜和PVA水溶性薄膜为研究对象,结合常用的水果销售包装方式——浅盘包装进行水果保鲜包装试验。通过研究不同的食品包装材料在水果保鲜中对水果的感官指标、理化指标和微生物生长的影响,分析研究不同保鲜膜对水果保鲜效果的差异,同时探讨PVA水溶性薄膜的保鲜性能,确定最适合于水果保鲜包装的包装材料。
研究证明,在室温(20oC)贮藏保鲜条件下,所用的保鲜膜中PE保鲜膜所包装的水果的感官变化最慢,失重率较低、总糖量和酸度变化最平缓,呼吸强度最低,果实中真菌菌落总数最少,是所选用的包装材料中最适合的水果保鲜包装材料;PVA水溶性薄膜在芒果的保鲜包装中综合保鲜效果最差,它所包装的样品感官变化速度、失重率、呼吸强度、总糖量和酸度变化都很大,实验证明不能将它直接用作水果的保鲜包装材料;PVDC保鲜膜由于其对水、水蒸汽、气体的阻隔性很好,并不适于作芒果这种呼吸高峰型和乙烯敏感型水果的保鲜包装材料;70%LLDPE30%LDPE的综合保鲜性能在四中材料中并没有突出的特点,它所包装的样品的感官变化速度和呼吸强度都很大,仅次于PVA水溶性膜所包装的样品,但微生物生长比较少,仅稍微少于PE保鲜膜中的样品。

ABSTRACT

This paper is to study on the effect of different packaging material on the fresh fruit preservation. we have studied on the sensory indicators, physical and chemical indicators and the growing of micro-organisms of fresh fruit treated with different preservation mate-
rials,  and analisized the different effect between different packaging materials and the fresh fruit preservation, then determined the most suitable for the fresh fruit packaging materials.  We have discussed the preservation capability of the PVA water-soluble film at the same time. In this study ,we chose mango as the test sample , and take the PE、70%-
LLDPE30%LDPE 、PVDC film and PVA water- soluble film as the packaging material.
Studies have shown that at room temperature (20℃) storage conditions, fresh mango treated with PE film had slower senses change than other three materials; and with the less loss on weight and total amount of sugar and acidity, moreover they had the lower respi-
ratory strength and less fungal colonies; PVA water-soluble film performance the worst overall in mango preservation test. Study have shown that it couldn’t be directly used for packaging fresh fruit ; Because of its perfect barrier capability to gas and water vapor, PVDC film shouldn’t be applied to package mango which is of the peak- breathe and ethene sensitivity style fruit ;And the 70%LLDPE30%LDPE film didn’t performance with prominent feature. Mango treated with the 70%LLDPE30%LDPE film have high senses change speed and strong breath intensity, but microbial growled relatively small, only slightly less than the sample packaged with PE film.
