中外饭店管理对比分析

摘  要

中国改革开放之后,随着经济的迅速发展,对于饭店的需求急剧增加,特别是高星级的饭店。中国的饭店业正处于刚起步的阶段,所以要借助于西方的管理技术。经过三十多年的磨合,可以看出有些借鉴是成功的,有些却是欠妥的。毕竟中国与西方等地的经济、政治、文化等都有诸多的不同,我们要想中国的饭店业走得更远走得更好,必须要适时做出变革,取其精华,去其糟粕。
中国饭店业其所在的大环境是经济高速发展,市场潜力巨大,但是法律、制度等还未够完善,饭店管理仍带有政治色彩。西方饭店业发展较为成熟,其所在的环境是饭店业已发展到相对高度,上升空间不大,竞争激烈,但其法律、法规做得比较完善。西方饭店管理值得借鉴的是其无形服务,服务理念以及集团化模式;而薪酬招聘制度与培训系统应和中国的实际情况想结合而做出改进,而中高级管理人才的空缺和相关技术的落后也要引起重视;中国饭店业照搬西方管理模式的阶段已经过去了,必需要找到自身未来的发展方向,重点是要培养本地的酒店业人才,完善培训机制;改善发展环境,完善法律法规,优化酒店空间布局。

Comparison  Between  Chinese and Foreign Hotel Management

Abstract
 
With the China’ economic develop rapidly, the China hotel industry grow up quickly, especial the high-class hotels. The development environment for China hotel industry are the marketization is not enough ; laws and regulations are imperfection; the market is very huge. Compared to the China hotel industry, The western hotel industry is mature and the competition is very intense. The China hotel industry should learn some good hotel management experience from the western, such as group management model, service concept, standard the intangible service. The salary and recruitment system and training system for the China hotel management should improve to adapt to the real situation of China. The China hotel industry should pay more attention to the high-class and middle-class administrative staff and the technology. In order to lead the China hotel industry to success ,we should cultivate the local administrative staff; perfect the training system; make the laws and regulations better; meet the different request for the hotel.
