中西菜肴命名比较研究中式菜肴的命名方法，主要有写实法、写意法和写实兼写意法；西式菜肴命名主要采用写实法。中西式菜肴命名方法的差异，主要表现为：西式菜肴命名重写实，中式菜肴命名重写实兼重写意；西式菜肴命名侧重揭示原料和制作方法，中式菜肴命名侧重揭示原料、制作方法及属性；西式菜肴命名以一类或两类组合为主，中式菜肴以两类组合或三类组合为主。中西方饮食文化的差异，是造成中西式菜肴命名方法差异的根本原因，突出表现在：中西方饮食理念不同，中西方烹饪方式不同。

Comparison on Naming of Chinese Dishes and Western Dishes
Abstract：The naming methods of Chinese dishes include realism, freehand brushwork, realism and freehand brushwork. Western style dishes are named after realism.
