针对具体餐馆的菜单翻译错误分析

摘  要

中国饮食文化在对外交流中起着举足轻重的作用,因此如何准确、优美地翻译中文菜单,以传播中国的饮食文化对中外交流有着重要意义。2012 年北京市人民政府外事办公室出版了《美食译苑:中文菜单英文译法》对菜单翻译提供指导。
为分析具体餐馆的菜单翻译错误,本文首先搜集了某知名酒店的英文菜单,总结其中餐命名方式,并对相应的翻译方法进行分类,然后将英译菜名与《美食译苑:中文菜单英文译法》中给出的指导进行对比分析,总结出其菜单翻译的错误并提出建议。
本文分析的错误主要分为三类:词汇层面、文化层面以及其他错误。词汇层面可分为三部分,即词汇的缺失、误用和多余;文化层面主要包括逐字翻译和文化意象丢失;其他错误包含形容词翻译错误、上菜方式翻译错误和来源出处翻译错误。

MISTAKES IN MENU TRANSLATION: CASE STUDY OF A SPECIFIC RESTAURANT
ABSTRACT

Chinese food culture plays a pivotal role in the process of foreign exchange, so how to translate Chinese menu with accuracy and aesthetics in order to spread the Chinese food culture is of great significance. In 2012, the Foreign Affairs Office of the Beijing Municipal People's Government published Enjoy Culinary Delights A Chinese Menu in English to provide guidance for menu translation.
In order to analysis mistakes in menu translation of a specific restaurant, this thesis firstly collected English menu of a well-known hotel, and then summarized naming methods of Chinese cuisine as well as classified corresponding menu translation methods. Next, by making contrastive analysis between the English menu and the guidance of Enjoy Culinary Delights A Chinese Menu in English, thesis summarized mistakes of menu translation and provided some suggestions.
The major mistakes analyzed in the thesis consist of three sorts: mistakes in lexical level, mistakes in cultural level and other mistakes. Lexical level can be divided into three categories, namely, lack of words, misuse of words and redundance of words. Cultural level consists of word for word translation as well as cultural defaults. Other mistakes include mistakes of adjectives, mistakes of the way served as well as mistakes of originations.
