社区大食堂经营策略分析——以鸿盛八号大饭堂为例

论文通过文献检索法收集整理二手数据，问卷调查及人员访谈法获取一手数据，对社区餐饮及鸿盛八号大饭堂进行分析。利用二手数据对中国餐饮宏观环境进行PEST分析，得出当前宏观形势下，基于政策趋势、消费者理念、科技技术支持等方面的有利于新餐饮及社区餐饮的发展条件。并运用波特五力模型，对鸿盛八号大饭堂所在微观环境进行梳理。接着，为问卷调查采集的一手数据情况进行总结与初步分析，随后运用SWOT分析法，对鸿盛八号大饭堂优劣势、机会与威胁四方面进行进一步分析，得出用以优化鸿盛八号大饭堂餐饮O2O模式经营策略的相应SO、WO、ST、WT战略建议。最后，展望新餐饮时代下的社区餐饮发展趋势。

Analysis on the Management Strategy of Community Canteens——Taking Hongsheng No.8 Big Dining Hall as an Example

Abstract: The paper collects second-hand data through the literature search method, and obtains first-hand data through questionnaire survey and personnel interview method, and analyzes community catering and Hongsheng No.8 dining hall. Using the second-hand data to conduct a PEST analysis of China's catering macro environment, it is concluded that under the current macroeconomic situation, it is conducive to the development of new catering and community catering based on policy trends, consumer concepts, and technical support. And use the Porter's five-force model to sort out the micro-environment of the Hongsheng No.8 dining hall. Then, it summarizes and analyzes the first-hand data collected by the questionnaire survey, and then uses SWOT analysis method to further analyze the advantages and disadvantages, opportunities and threats of Hongsheng No.8 dining hall, which is used to optimize Hongsheng eight. No. SO, WO, ST, WT strategic recommendations for the O2O model business strategy of the dining hall. Finally, look forward to the development trend of community catering under the new catering era.
