龙岩市的菜名特点与英译策略
龙岩,作为福建省的一个小城市,以独特的客家文化以及丰富的旅游资源吸引越来越多的国内外游客。龙岩菜,由于其独特的风味,受到很多外国人的喜爱。然而,关于龙岩市的菜名特点以及菜名翻译策略的研究却少之又少,这给那些想要品尝龙岩菜的外国游客带来极大的不方便。为了让外国游客更好地了解龙岩菜以及更好地把龙岩饮食文化传播到全世界,龙岩菜名的英译是翻译者的一项必不可少的工作。
本文旨在讨论如何进行龙岩菜名的分类以及如何使用合适的翻译策略和翻译方法翻译龙岩菜名。文章以目的论作理论支撑,来翻译龙岩菜名, 这些龙岩菜名包括以地名命名、以主要原料命名、以制作方法命名以及以象征意象命名的菜名。文章还讨论了翻译龙岩菜名的翻译策略和翻译方法,包括直译法、意译法、音译加注法以及异化翻译法希望能为外国游客理解龙岩菜提供借鉴。

Features of Longyan Dish Names and Their Translation Strategies
 
Abstract: Longyan, as a small city of Fujian Province and an attractive place with unique Hakka folk customs and rich tourism resources, has been attracting more and more tourists at home and abroad to come and visit. Longyan dishes, with its unique taste and flavor, also attract many foreigners. However, few researches have been done on Longyan dish names and the strategies of translating them into English, which creates a major inconvenience to foreigners who try to appreciate Longyan dishes. In order to help foreigners to have a better understanding of Longyan cuisine culture and popularize it to the whole world, it is necessary for translators to translate Longyan dish names into English.
    This paper tries to discuss on how to classify Longyan dish names and how to translate them into English with Skopos Theory as theoretical support. The author uses the Skopos theory to guide the translation of Longyan dish names which include names after places, names with main ingredients, names with cooking methods and names with symbolic images. Then this paper conclude translation strategies and methods of Longyan dish names, including literal translation, free translation, transliteration + paraphrasing and foreignization,so as to facilitate foreigners’ understanding of Longyan food culture.
