盼盼法式小面包中大肠埃希氏菌的检测方法

当下,食品安全问题作为社会热点问题,其中食源性致病菌的检测方法的完善改革一直是相关研究人员的研究焦点,为构建一种对于盼盼法式小面包中大肠埃希氏菌的快速有效的检测方法,本实验采用多频大幅脉冲伏安法的电子舌检测食源性致病菌大肠杆菌。通过实验室培养大肠埃希氏菌,进行人工制备大肠埃希氏菌的浓度梯度稀释液,选用固定浓度菌种溶液侵染盼盼法式小面包样品制成面包样品溶液,在25℃条件下对面包样品进行不同时间段的贮藏,之后对不同变量条件下的样品使用电子舌检测系统进行检测,测得数据后结合系统自带的主成分分析,偏最小二乘分析,质量检验等分析方法,作出图像,构建数据模型。发现电子舌可以直观地发反映出盼盼法式小面包溶液样品中大肠埃希氏菌浓度104cfu/ml下有良好的检测能力。

Detection of Escherichia coli in Panpan French Bread        
              
Abstract:At present, food safety is a hot issue in society. The improvement of detection methods for foodborne pathogens has always been the focus of relevant researchers. In order to construct a fast and effective detection method for Escherichia coli in bread, the electronic tongue of multi-frequency large pulse voltammetry was used to detect foodborne pathogenic bacteria. The concentration gradient dilution of Escherichia coli was manually prepared by culturing Escherichia coli in laboratory. The bread sample solution was prepared by using fixed concentration bacterial solution to infect the Panpan-French bread sample. The bread sample was stored at 25 C for different periods of time. Then the samples under different variable conditions were detected by electronic tongue detection system. After the data, the image is made and the data model is constructed by combining the principal component analysis, partial least squares analysis, quality inspection and other analysis methods. It was found that the electronic tongue could directly reflect the good detection ability of Escherichia coli at 104 cfu/ml in the sample of Panpan French Bread Solution.
