疫情下餐饮业利润稳定增长路径研究—以海底捞为例


突如其来的新冠肺炎疫情,各行各业或多或少都受到了它的影响,餐饮业更是受到了直接的冲击,不少餐饮业甚至面临着资金链断裂乃至倒闭的困境。根据国家统计局发布的2020年一季度社会经济发展状况显示,2020年1-3月,全国餐饮收入6026亿元,同比大幅下跌44.3%,较2019年同期相比,餐饮业收入呈现出”断崖式”下跌。
     2020年,海底捞集团实现收入286亿元,同比增长7.8%;全年净利润3.09亿元,对于2020年业绩,海底捞表示,全年净利润如抹平2020年上半年因疫情导致的9.65亿元亏损,实际在下半年已经实现盈利。作为餐饮业的一员,海底捞是如何实现利润稳定增长的?本文从海底捞经营模式和应对疫情的措施两个角度,总结出海底捞在疫情下利润稳定增长的经验关键在于完善风险预警机制、拓展线上业务渠道、抓住“消费潮”机遇、差异化的服务、人性化的人力资源管理体系五个方面,以期为其他餐饮企业提供借鉴。

Abstract

Compared with the same period in 2019, Catering industry income showed a "cliff" decline. From May to November, Its income is growing, Revenue rose to 301.33 billion yuan in May, Its income continued to rise to 371.51 billion yuan in September, By November 2020, the national catering income reached 497.97 billion yuan.
 In 2020, the Haidilao Hotpot achieved revenue of 28.6 billion yuan, an increase of 7.8 yuan over the same period last year; the annual net profit of 309 million yuan, for 2020 results, Haidilao Hotpot that the annual net profit of 965 million yuan due to the epidemic in the first half of 2020, the actual profit has been realized in the second half of the year. As a member of the catering industry, how to turn losses into profits and achieve stable growth of profits? This paper, from Haidilao Hotpo for a long time of development mode and the two angles of the outbreak response measures to Haidilao Hotpo stable profit growth under the outbreak were analyzed, and found its merit and the remaining problems, according to its operation is put forward according to the risk, reduce the risk of expansion and reasonable cost control and so on, at the same time, its merit also provides a reference for other catering enterprises.
