连锁餐饮企业建立中央厨房的可行性分析摘 要
本文通过讨论中央厨房的含义和流程模式图，中央厨房具有的特点和主要功能，进一步引出中央厨房的主要优势。整个论文通过阐述中央厨房的优势来说明在中国连锁餐饮企业建立中央厨房的紧迫性和必要性。中央厨房有效推动连锁餐饮企业的发展。因此，如何实现高标准化、高复制能力的餐饮工业化是连锁餐饮企业在残酷的行业竞争中生存下去并且能盈利的有效途径。连锁餐饮业发展到今天，中央厨房是一个不可避免的话题。面临营业利润不断下降，营业成本不断增加，人员流动日益频繁的今天，劳动密集型、完全依赖手工操作的餐饮业的生存问题日益严重。廉价劳动力已不复存在，企业当前的生存也是很大问题，更不用说企业长远的发展。中国餐饮连锁企业的发展问题日益明显。人才缺少带来的管理上的落后，高人员流动率带来的产品质量的不稳定性，物价和费用开支上涨带来的成本持续上涨。走出连锁餐饮企业的瓶颈期，再次实现连锁餐饮企业良性，高质量的发展必须借助于中央厨房的力量。

ABSTRACT
This paper introduces the main advantages of the island kitchen by discussing the definition, the process model, the features and functions of it, to show how necessary and urgent it is to establish the island kitchen in China. Island kitchen can promote the development of chain restaurant companies effectively. Therefore, how to achieve the dining industrialization with a high standard and high replication capacity will be an effective way for catering enterprises to survive and make profits in the severe competition of this industry. By now, the island kitchen has become an unavoidable topic for the development of catering industry. Facing declining profits, increasing operating costs, the drain of staff and labor-intensive, the survival of the catering industry which is completely dependent on manual operation, are getting more and more serious. With cheap labor ceasing, the current existence is a big problem for an enterprise, not to mention the development in the long run. The development problem of Chinese chain catering enterprises is more and more obvious, such as the backward management brought by the lack of talent, the instability of products caused by the high employee turnover, the increasing costs caused by rising prices and fees. There is no other way but using the power of the island kitchen to get out of the bottleneck of the chain catering enterprise and realize it’s benign and of high quality development.
