随着世界经济的一体化发展,世界范围内的饮食文化的融合是大趋势。饮食文化是民族文化的一个重要组成部分,在“民以食为天”的并享有世界烹饪王国之称的中华大地,烹饪艺术,饮食文化扮演着巨大的角色。
    随着旅游业的发展,越来越多的外国游客来中国旅游,“吃”作为旅游六要素中最重要的一个部分,在整个旅游过程中占有特定的位置。品尝独具特色的中国美食已成为海外游客在中国观光游览的一项重要内容。饮食文化是中国文化的一个重要组成部分,是中国人民在长期的饮食实践活动中创造出来的物质财富和精神财富的总和,是中华文化的重要组成部分,也是来华外宾了解中国文化的一个重要窗口。中餐菜谱的翻译不仅仅是英汉意思之间的转换,更重要的是文化的传递。由于中西方饮食文化的巨大差异,不同民族有着不同的文化,这种饮食文化差异反映在菜谱翻译表现为饮食观念的不同,烹饪方式的不同,进餐方式的不同等等。
所以,我们在翻译菜名的时候,需从中英两国的饮食文化差异上入手。了解不同的社会文化信息,对于中餐菜名的翻译有着极其重要的意义。有的菜名已不单纯是一个菜肴的名称,而是一个可引发丰富联想的艺术品名,有的菜名还有着动人的故事传说,准确形象地把中式菜名恰如其分地翻译成英语,让外国友人在品尝中国菜肴美味的同时,还能从菜名中了解中国菜肴的烹调艺术和文化内涵,因此,中国菜肴名称的英译研究具有现实意义。

On the Translation of Chinese Receipts from the Perspective of Chinese and Western Catering Cultural Differences


Abstract: With the rapid social development and the profound communication with other countries, the culinary arts and the dietary culture have become more important in homeland China. Chinese People believe in "man eats by nature" and consider Chinese diet as essential prerequisites for human beings. A country's diet is closely related with its culture, so we can understand their own and other's dietary characteristics more clearly through their different cultural exchange and comparisons.
  With the development of the tourism industry, there are more and more foreign tourists come to China. It is well known that among six basic tourism elements the most important part of tourism is eating, which occupies a particular position in the entire process of tourism. Unique Chinese food has become an important content through the entire sightseeing tour for overseas tourists in China. The dietary culture is an important part of Chinese culture and the sum of material and spiritual wealth, which created in the dietary activities from a long time in Chinese. It is an important component of Chinese culture and is also a bridge for the foreign guests to understand Chinese culture. The menu translation in China is not only the exchange meanings between English and Chinese; moreover, it is a main source of transmission among different countries. As the great differences of diet culture between Chinese and Western and different nations have different cultures, which reflects on the translation of the dietary cultural like diet concepts of eating, ways of cooking , dining ways and so on.
  The translation of Chinese recipes, we should start from the different countries dietary culture. It occupies great significances on the translations of Chinese recipes through the understanding of different social and cultural information. Some recipes are not simply a name for a dish, but an artistic name that can be thought by people; while some recipes have moving stories which can be translated into Chinese recipes names accurately in proper extents. As the foreign friends, not only they can taste delicious dishes, but also understand the art and culture from Chinese dishes names. Therefore, there is a realistic significance on the study of the translation of Chinese recipes.
