徽式菜肴的外宣翻译
Anhui Cuisine, also called Hui cuisine or Anhui Flavor, is an essential part of traditional Eight Chinese cuisines. Along with the growth of Huizhou Commerce, Anhui Cuisine embraces an impressive development trajectory, featuring profound cultural background and unique charm. The cuisine of Anhui style, due to the deepening of the communication between China and other countries, the raising of China’s globalized degree as well as the booming of a new Anhui province, has been increasingly popular all over the world. Given this, the study of the external publicity translation of Anhui Cuisine is indeed of great importance in that it can not only contribute to disseminate Anhui culture, but also help foreigners form a better understanding of Anhui province, which can thus avail to project a still better image of Anhui province.
However, researches of this field are rare and usually of low quality, leading to there are little and almost no reference can be found. On this very note, this paper gives the definition of the external publicity translation and Anhui cuisine in an attempt to figure out what kind of translation of Anhui dishes belongs to the external publicity translation. This is the first step. Secondly, it looks to find out mistakes and problems in existing translations of Anhui cuisine and provides correct translations in accordance with translation techniques, such as literal translation, free translation and transliteration, so as to work out the general principle
for the Chinese-English translation of Anhui Cuisine and set examples for those who are committed to this area.
In a word, this paper emphasizes on the external translation of Anhui cuisine and offers several practicable methods to more idiomatically translate Anhui cuisine so as to better bring Anhui catering culture to the outside world.

摘  要
徽式菜肴即安徽菜,又称“徽菜”, 或“安徽风味”。徽菜独具一格,自成一体,紧随着徽商的崛起,繁荣而逐步发展,徽式菜肴具有丰厚的文化底蕴,散发着悠远、独特的魅力。随着中外交流不断加强,中国国际化水平不断提高以及新安徽的日益繁荣,徽菜逐渐受到世界各地人民的欢迎,而研究徽菜的外宣翻译不仅对安徽文化的传播起到积极有效的功用,还能帮助国际友人了解美好安徽,进一步提升安徽的国际形象。
然而,目前有关徽菜翻译方面的研究可谓凤毛麟角且质量堪忧,至于将外宣因素考虑在内的菜肴翻译更是少之又少甚至无人问津。鉴于此种现状,本文首先给出徽菜外宣翻译的定义,界定徽菜的外宣翻译范围,其次对目前已有的徽菜英译进行梳理、分类和总结,找出其中的不足,再依据相关翻译理论和方法,如音译法、直译法及音译法,力求提出合理规范的徽菜英译版本,在此基础上制定徽菜外宣翻译规范的标准和原则,为徽菜的外宣翻译事业尽绵薄之力。
总而言之,本文重点讨论徽菜的外宣翻译,针对徽菜的翻译现状,提出几种切实可行的翻译策略,从而更好地对外传播安徽文化,树立良好的安徽国际化形象。
