年产50000吨葡萄酒生产工艺设计
本次设计的课题是设计年产50000吨葡萄酒生产工艺。红葡萄酒的生产工艺是通过将新鲜的葡萄进行筛选、除梗破碎、浸渍发酵、分离、苹果酸乳酸发酵、分离、过滤等多个步骤后最终得到葡萄酒。根据100kg葡萄所酿出的葡萄酒的量,计算出葡萄酒的出酒率大约是65.69%,即生产50000吨葡萄酒所需消耗新鲜葡萄原料76115吨;根据对所需发酵罐尺寸的计算选用容积为200m ,33个利用率为85%的发酵罐;通过热量衡算得知年产50000吨葡萄酒的耗冷量为795958.5kcal/h;通过附属设备的计算完成设备的选型。本次设计主要是针对红葡萄酒的生产工艺流程的制定,发酵罐的计算与选型,及各种衡算和工艺计算,并最终绘制发酵罐图和生产工艺流程图。

Production process design of 50000 tons annual wine
Abstract:This design project is designed with an annual output of 50000 tons of wine production technology. Red wine production process is through the selection of fresh grapes, in addition to crushing, impregnation fermentation, separation, malic acid lactic acid fermentation, purification treatment, filtration and other steps after the final wine. According to the amount of wine produced by 100kg grapes, the wine yield rate is about 65.69%, that is, 50000 tons of wine will consume 76115 tons of fresh grape raw materials, and according to the size of the fermentation tank, the volume is selected as the fermentation tank with a 200m³,33 ratio of 85%; According to the heat balance, we know that the consumption of 50000 tons of wine is 795958.5kcal/h, and the selection of equipment is finished by the calculation of ancillary equipment. This design is mainly aimed at red wine production process, the calculation and selection of fermentation tank, and all kinds of accounting and process calculation, and finally draw a fermentation tank diagram and production flow chart.
