地沟油乳化剂法的电导率检测

地沟油乳化剂法的电导率检测随着食品安全问题的不断爆出,人们对食品的安全问题日益重视,大量不安全用油被不法分子加工返回人们的餐桌,因此对于地沟油、复炸油的检测尤为重要。地沟油是指生活中存在的油的品质不好的油,如下水道里的泔水油、反复进行油炸的油。地沟油价比较便宜、品质不好、卫生状况极差的非食用油。如果不注意食品卫生食用地沟油的话,它对我们的血液系统和消化系统遭成严重的损害并引起食物中毒的现象。因为地沟油含有大量的有毒物质,所以精确检测地沟油具有重要的现实意义。 本文主要探究三个方面: (1) 以温度为变量选取常温油、微热油和热油三组实验对象。探究温度对四种正常植物油、复炸油以及阴沟油电导率的影响。 (2)以不同浓度的脂肪醇聚氧乙烯醚为乳化剂,四种不同的纯植物油、复炸油和阴沟油为分散相,探究正常食用油、复炸油和地沟油乳化液的电导率之间的差异。 (3)探究电导率法对地沟油的定量分析。 关键词:地沟油;乳化剂;电导率;检测 Abstract With the continuous outbreak of food safety problems, people pay more and more attention to food safety problems. A large number of unsafe oil is processed by criminals and returned to people's tables. Therefore, the detection of gutter oil and refried oil is particularly important. Gutter oil refers to the oil with poor quality existing in daily life, such as the slop oil in the waterways and the oil that is repeatedly fried. Gutter oil price is relatively cheap, poor quality, poor health condition of non-edible oil. If we do not pay attention to food hygiene and eat gutter oil, it will do serious damage to our blood system and digestive system and cause food poisoning. Because gutter oil contains a large amount of toxic substances, it is of great practical significance to accurately detect the gutter oil. This paper mainly explores three aspects: (1) Taking temperature as a variable, three groups of experimental subjects were selected: normal temperature oil, slightly hot oil and hot oil. The effects of temperature on the electrical conductivity of four kinds of normal vegetable oil, refrying oil and gutter oil were investigated. (2) Using different concentrations of fatty alcohol polyoxyethylene ether as emulsifier and four different kinds of pure vegetable oil, re-frying oil and gutter oil as dispersible phases, the differences of electrical conductivity of the emulsions of normal cooking oil, re-frying oil and gutter oil were investigated. (3) Explore the quantitative analysis of gutter oil by electrical conductivity method.
