PVDC/LDPE膜包装保鲜冷却肉的研究


摘  要

聚偏二氯乙烯(PVDC)是以偏二氯乙烯(VDC)为主要成分加入其他含不饱和双键的第二单体共聚而成的聚合物,无毒无味,并且具有耐油性、耐腐蚀性、保香性以及优异的防潮、防霉、印刷性能、透明特性以及着色性。低密度聚乙烯有较好的柔韧性、透明性、无毒、加工方便、热封性能优异等优点。乙烯-乙烯醇共聚物(EVOH)是高阻隔材料主要用在食品包装。
本文通过选用PVDC/LDPE复合膜与EVOH多层共挤拉伸膜对冷却黄牛肉的真空包装保鲜对比实验,得出了PVDC/LDPE复合膜对产品的保质效果明显好于EVOH多层共挤拉伸膜。在5℃的条件下,采用PVDC/LDPE复合膜与EVOH多层共挤拉伸膜分别对冷却黄牛肉进行真空包装。通过微生物、汁液渗出量、pH值、色泽、挥发性盐基氮(TVB-N)、H2S试验、系水力几项实验,实验结果表明:PVDC/LDPE复合膜对产品的保质效果在汁液渗出量、pH值、H2S的变化、系水力四个测试项目中明显优于EVOH多层共挤拉伸膜,且PVDC/LDPE复合膜的成本不足EVOH多层共挤拉伸膜的一半。经多方面考虑,得出PVDC/LDPE复合膜更适用冷却肉保鲜包装。

ABSTRACT

Polyvinylidene chloride is a polymer with the Vinylidene chloride as the main constituent added into other comonomers with unsaturation bonds. PVDC is innoxious and be able to bear corrosivity,having good barriers to oil,flavors,moisture and odors. Excellent at moisture-proof, anti-mildew, and with good performance of printing, transparency and Coloring. LDPE have the qualities of flexility,transparency, innocuity,machinablity,heat sealing etc. EVOH have excellent barriers, mainly used in food packaging.
Through the comparison of the preservation for chilled beef of the PVDC/LDPE composite membrane and EVOH multilayer co extruded tensile membrane, the result shows that the PVDC/LDPE composite membrane is obviously better than the EVOH multilayer co extruded tensile membrane to keep the product's quality. In 5 °C conditions, chilled beef were vacuum-packed differently by PVDC/LDPE composite membrane and EVOH multilayer co extruded tensile membrane,testing the number of microorganism, liquor leakage amount, pH value ,color, TVB-N, H2S and water intake capacity, the result shows that the PVDC/LDPE composite membrane is obviously better than EVOH multilayer co extruded tensile membrane at liquor leakage amount, pH value ,change of H2S and water intake capacity,and the cost of PVDC/LDPE composite membrane is less than half of the EVOH multilayer co extruded tensile membrane. In the general, PVDC/LDPE composite membrane is more suited to preserve the chilled beef.
